I wanted a machine that turned out a horizontal loaf rather than a vertical one. I first tried the Oatmeal bread recipe in the Oster book. It came out perfectly. Next I tried using Bob's Old Mill gluten free bread mix for hand or machine baking. At first I was a little worried as during the second knead I was not getting a smooth round ball. I added a some flour a tablespoon at a time. It still did not look right but it came out perfectly. Next time I may not add the extra flour to see what happens. I will continue to experiment with gluten free recipes so I do not have to rely on the mix as it is only a little less costly than a loaf of GF bread. The main point here is that the Oster is a good value all purpose bread machine. The instructions that came with the Oster said to use bread flour only. The mix I used had among other things, bean flour, and I still got a yummy tasting bread. I have read that... Recipes outa the manual work well, but top doesn't always brown well. Sides brown OK, but top doesnt get that nice light golden brown the sides do. But a little practice can get some very good loaves... The Spring Sweet bread in the manual is ALWAYS KILLER! (good recipe with orange zest). I have NewYork Rye down pretty good modifying the LightRye from the book, add a bit more water(rises taller) and a tad more sugar to get that nice golden brown top, and add a little caraway. (give it a few knife slices on top right b4 bake - and lookin better than bakery bought!) Its usually the smaller/short loafs that dont brown the top well, especially 1 or 1 1/2 lb size loaf that doesnt rise completely to the top of the pan. 2lb or modified 1.5lb that rizes a litle more look better... It never makes a total dud loaf - recipes straight outa the book tend to be very dense and heavy - but and i'm learning. The last one... I have had many in the past years and really like this one! it has a rapid 58 min setting that is great for hot dinner bread. It's wonderful! A+++ But, my paddle was thrown away with an old loaf of bread and I'm having a hard time finding a replacement. My own stupid fault. |
